Sambal Heh Bee (Traditioonal Chinese: 參巴蝦米, Simplified Chinese: 参巴虾米) is a Penang dish of dried prawns in sambal. The dried prawns are pounded until they are in small pieces. Sambal Heh Bee is very tasty when taken with white rice or bread. It is often used as a filling for paus.

On this page I share with you the recipe of our homemade sambal heh bee which my wife makes.

Sambal Heh Bee Recipe

Ingredients:
  1. Dried prawns - soak and pound
  2. Tamarind pulp - mix with water, set aside. Strain and obtain juice.
  3. Dried chili - cut and soak
  4. Lemongrass - cut
  5. Toasted belacan
  6. Shallot
  7. Garlic
  8. Sugar
  9. Salt
  10. Kaffir lime leaves - slice finely
Method:
  1. Blend the soaked chilis, lemongrass, toasted belacan, shallot and garlic until fine paste.
  2. Heat up a wok with some oil. Pour in the ground paste, and stir until 'pecah minyak'.
  3. Add in pounded dried prawns and tamarind juice, season with sugar and salt.
  4. Stir until the desired consistency.
  5. If you prefer a dry and crumbly sambal, stir over medium flame until it is quite dry.
  6. Finally add in sliced kaffir lime leaves, and mix well.
  7. Leave to cool before storing in air-tight container.
材料
  1. 亚参膏 - 加水浸10分钟, 过沥

香料(磨碎)
  1. 辣椒干- 剪段浸软
  2. 香茅 - 剪小段
  3. 峇拉煎
  4. 葱头
  5. 蒜头
  6. 疯柑叶- 切丝

做法
  1. 烧热油,爆香磨碎香料至出辣椒油。
  2. 加入虾米,亚参水,盐和糖调味。
  3. 炒至所要的口感。
  4. 如要干脆一点, 就用中火炒至干。
  5. 最后加入疯柑叶, 拌匀。
  6. 盛起待凉,收进密封容器中。
