What is Laksa

Laksa, one of the most famous hawker food in Penang, is a spicy noodle shop of Nyonya origin fusing Malay and Chinese culinary elements. The Penang definition of Laksa, a dish of round rice noodle in a spicy fish-based broth, is different from Laksa found in other states of Malaysia. (Indeed, there are half a dozen versions of this noodle soup in Malaysia and Singapore, all going by the name Laksa.)

Penang Laksa is a spicy soup made of assam ko (tamarind) with fish flakes made from poached ikan kembung (mackerel). Ingredients added to it include chang mau (serai, lemongrass), lengkuas (galangal) and of course, chilli. Garnishes include po ho (daun pudina, mint); slices of pineapple, cucumber and onions; bunga kantan (torch ginger flower), and hae ko (shrimp paste).
