Watercress (Chinese: 西洋菜汤) is said to be among the oldest vegetables to be eaten by humans, and it continues to be a popular vegetable in Penang. Watercress is usually cooked as a soup. It is often found as an accompaniment at food stalls selling chicken rice and other rice dishes. At home, we make a meatier version of the soup which forms the main dish on the dinner table.

Watercress Soup Recipe
Ingredients:
Pork ribs or �soft' bone
Watercress - cleaned and cut into smaller sections
Red dates
Salt
Water
Method:
Boil a pot of water, add in the pork and skimmed off the scum.
Add in the watercress and cook until the meat is tender.
Season with a little bit of salt, and the soup can now be served.
