Hor Snua Cni is a deep-fried peanut fritter that is often sold at the markets in Penang. The name hor3snua1 cni33 means "umbrella fritter" in Penang Hokkien, because it looks like an open umbrella.
Hor3snua1 cni33 is not often made at home, as one needs the proper utensils, in particular the mould. The ingredients are wheat flour, rice flour and tapioca, with of course some peanuts. The ladle-like mould is filled with the batter and topped with a handful of peanuts, and then submerged into a wok of boiling oil. Once the batter begins to fly, it should come off from the mould in one piece.
Using one's one judgement, leave the fritter to darkened on one side before turning it over. Once the fritter has darked nicely on both sides, take it out of the oil and leave it to dry on a drip tray, colander or disposable kitchen towel.
Hor3snua1 cni33 is best eaten when freshly made, as that's when it is hot and crispy.
