Fried shallot, or "iu3charng1", is often used in local cooking. You often eat it as topping in Hokkien Mee. You can buy it in the supermarket, but nothing beats freshly made fried shallot, straight from your own home oven. The whole village will know you are making fried shallot, because the aroma goes everywhere!
We made this batch of fried shallots specially for the Jawa Mee that my wife is planning to make this weekend.
