Cinnamon Stick (Kayu Manis)

Kayu Manis (cinnamon stick) is the dried, reddish-brown bark of the cinnamon tree. You can buy it from the market in curls. They are used in Nyonya cooking as condiment as they add a sweet, floral fragrance to dishes. The fragrance comes from the aromatic essential oil that the bark releases. The cinnamon tree is a native of Sri Lanka, from where the best cinnamons come. Its scientific name is Cinnamomum verum, from the family Lauraceae. The tree grows to a height of 10-15 meters Chinese cassia bark offers a similar fragrance, is cheaper, and is often passed off as cinnamon.
