Making Bak1 Knua1 in Penang Hokkien

Bak1 Knua1 is Chinese barbecued meat. In this passage, I learned from my wife how she makes bak1 knua1 and wrote down the steps according to how she explained it to me. This being Penang Hokkien, there are many loanwords from English in use. I decided to keep it as it is, rather than use pure Hokkien words which might not be familiar to Penang Hokkien speakers.

Wah4 cin3cnia1 ho1 hock1khi3 eng3goay33 wah1 mien1 tiok3 beh1 bak1knua1. Ti1 wah1-eh3 chu1lai33, a33si33 wah1-eh3 bor4 sniau33 boek1 ciak1, ee1 tok33 ka3ki3 co3. Ka3ki3 co3 tok33 khah1 snae4, kokh1 e33 kor3 cor3 kiam2 cor3 tnee1.

Co1 bak1knua1 eng2 nia33. Lu1 ka1 lu1-eh3 beh33 bak3-eh3 lang2 kong4 lu1 boek1 co1 bak1knua1. Ie1 tok33 thai2 hor33 lu4 lu1 boek3-eh3 bak3. Ti1 chu3, lu1 haeh3 thng2, hu3lor3, tau33iu2, ngor1hiang3hoon4, hor3cio3hoon4, bee1ciu4, oh3iu2 kah1 red yeast rice. Kiam3 cnia4 ka3ki3 chiau2. Ka1liau4-eh3 mi3knia3 haeh3 ti1 bin33phun2 liau4 yong33 lu1-eh3 chiu4 la33 enee3-enee3 khor1 kau33ka1 liam3-liam2. Kiau4 ciau2 liau4, siu1 ti1 plastic bag ti1 sng3tu2 (mm33 si33 ti1 freezer) te33-it1 cio4 see1 tiam1ceng1. Koay1 meh2 tun1 e33sai4.

Koay3 see1 tiam1ceng1 liau4, gia3 bak3 ti1 sng3tu2 chut3 lai2. Haeh33 ti1 cit3-leh3 tray, chu1 ka1 aluminium foil. Teng1bin33 kham3 ka1 cit3-tniau1-eh3 cling film, liau4 yong33 rolling pin lu33 hor33 i1 pnae3-pnae2-eh3 kau33. Cun33liong33 mm33thang3 sniau3 pok1. Mm33thang3 boh3 pnae3 kau3, a33si33 boh2, uh33 ui33 chao1hoay1ta1, uh33 ui33 boh3 kao1giak3 seik1.

Khui3 oven. Haeh3 kae3kiam4 170 tor33 Celsius. Pu2 heh1-leh1 bak3 kae3kiam4 10 hoon3ceng1, kau3ka1 bak3 pin1 seik3. Gia2 chut3 lai2. Tong33, a33si33 siang33ka1 spring spring tok33si33 ho4 liau4. Paek3 khi3 lai2 heh1-leh1 aluminium foil liau4 yong33 ka3to1 ka1 heh1-leh1 bak3 cor3 tua33 tay3 lu1 boek3.
