Bawal Hitam

Bawal Hitam is the Malay name for black pomfret, a fish from the Bramidae family. It is a popular fish in Malay, Indian as well as Chinese cuisine. Bawal Hitam is called "orh chiau" in Hokkien, and is related to the white pomfret (bawal putih / pek chiau) and the tau teh.

There are two popular ways to prepare Bawal Hitam. The first is to stuff it with sambal and then stir fried until the skin is crispy. The second method is to cook it in fish curry, with onions, tomatoes and ladies fingers. I love it done either way.
