Kayu Manis (cinnamon stick) is the dried, reddish-brown bark of the cinnamon tree. You can buy it from the market in curls. They are used in Nyonya cooking as condiment as they add a sweet, floral fragrance to dishes. The fragrance comes from the aromatic essential oil that the bark releases. Cinnamon sticks find their way into both savoury as well as sweet dishes, from curries and stews to pastries, cookies and cakes. In addition to whole sticks, cinnamon is often sold in powder form.

The cinnamon tree is a native of Sri Lanka, from where the best cinnamons come. Its scientific name is Cinnamomum verum, from the family Lauraceae. The tree grows to a height of 10-15 meters Chinese cassia bark offers a similar fragrance, is cheaper, and is often passed off as cinnamon.
