Bulaluhan Sa España (GPS: 14.61593, 121.00028) is a local eatery in Quezon City, Metro Manila. It occupies two ground-floor units of a three storey building on busy España Boulevard, one of the main thoroughfares of Quezon City, at the junction with Josefina Street.

Bulaluhan Sa España is run by Mrs Florenia Pineda, who started the business in 1998. Her speciality is Bulalo, a light-coloured beef soup. The chunks of beef shanks and bone marrows are cooked for a long time, until the collagen and fat have melted into the broth, which is also enhanced with corn, vegetables and onions. This is eaten with rice, and a dip made with soysauce, calamansi lime and chilli.

Bulaluhan Sa España was the first stop on the Food Frenzy Safari on 5 April, 2017. The event is part of the World Street Food Congress 2017. Upon arrival, we trooped down from our coach into the restaurant to meet Mrs Pineda. It was the first time I have entered a Filipino-style working-class restaurant. To be exact, a working-class restaurant of this type is called a "turo turo restaurant" for it offers what corresponds to "nasi campur" or "economy rice" back home in Malaysia. Likewise, you point at the dishes you want, and they are scooped out for you, and place on your plate together with your rice and other selected items. The word turo turo comes from Tagalog, and translates literally to "point point".

But this morning, our group of foodies did not have to do any pointing, for all the dishes were already laid out and were waiting for us!

This is Tawilis, which is freshwater sardine that is found only in the Philippines. It is tossed in flour and then deep fried. (5 April, 2017)
